// Ingredients

• Fresh Ossetian or Adyghe cheese — 300 g
• Full-fat sour cream — 300 g
• Flour or semolina — 2 tbsp
• Salt — to taste

// Method

1. 01Warm the sour cream in a saucepan over low heat until fat begins to separate.
2. 02Add the crumbled cheese and stir until it melts.
3. 03Gradually add the flour, beating hard with a wooden spoon.
4. 04Cook for 7–10 minutes until smooth and stretchy with butter pooling at the edges.
5. 05Add salt if needed.
6. 06Serve hot with cornbread or Ossetian pies.
