Khalyzho

Khalyzho are fried pastries made from thin dough, shaped as a triangle or a half-moon, crisp on the outside and soft inside. The filling is traditionally Adyghe cheese; variants with potato and green onion also occur. They are served hot, including in large batches for guests.

Thin dough folded around cheese becomes a crisp crust that keeps the filling warm all the way to the table.

// Historical background

Among the Adyghe people, khalyzho is known by this name; in Kabardian, similar fried pastries with cottage cheese are called khelyve. The name should not be confused with the sweet halva khelyue, which is a different dish, although the words sound alike.

Khalyzho is a festive treat that is prepared in large batches. It counts among the dishes served both on festive and everyday Adyghe tables. Adyghe cuisine retains its distinctive character today, and baked goods such as shchelyam and guubat remain part of the tradition. Khalyzho is among the national dishes passed down within Adyghe cuisine.
