Mezhadzhe

// Ingredients

• Cornmeal — 300 g
• Plain flour — 50 g
• Kefir or water — 300 ml
• Baking soda — ½ tsp
• Sugar — 1 tsp
• Salt — ½ tsp
• Vegetable oil — 2 tbsp

// Method

1. 01Mix both flours with the salt, sugar and soda.
2. 02Add the kefir and oil and mix into a soft dough.
3. 03With wet hands shape cakes 1.5–2 cm thick.
4. 04Cook in an oiled pan under a lid over low heat for 10–12 minutes on each side, or bake at 200 °C for 25 minutes.
5. 05They should be golden and cooked through.
6. 06Serve with shchips, cheese and ayran.
