Khingalash is a unique dish of Chechen cuisine — tortillas made from hard-boiled wheat dough with sweet pumpkin: the delicate filling is perfectly combined with a crust melting in the mouth; it is customary to serve with melted butter. To achieve a soft texture, the tortilla has been dipped in hot water for centuries after cooking
The dish is so nutritious that if a guest at the table is not eating well, the host can tell him: "You are eating as if you have recently eaten khingalash."

Историческая справка

For a long time in Chechnya, not only barley, wheat, millet, corn, oats, rice, but also many other crops, including industrial (flax, cotton). The most ancient cereals in the republic can be considered barley and wheat. For the preparation of flour products, buod dough was prepared both as usual and with yeast (sevsina buod — fermented dough).
Chechens have long been familiar with yeast made from hops — khoyakhar. The dough for tortillas and pies is often acidified with sour milk, while the pastry is prepared with an admixture of eggs and sugar. The filling for most tortillas is cottage cheese, fresh cheese, mashed potatoes, pumpkin. It is not surprising that it was the above that was used for food, because Chechnya is famous for the successful cultivation of melons and animal husbandry.
