Ayran

// Ingredients

• Thick yogurt or katyk — 500 g
• Cold water (still or sparkling) — 400 ml
• Salt — ½ tsp
• Mint — optional

// Method

1. 01Put the yogurt into a jug.
2. 02Add the cold water and salt.
3. 03Whisk or blend until lightly frothy.
4. 04Taste and add more water or salt if needed.
5. 05Chill.
6. 06Serve with ice and mint — ayran is especially good with meat and pastries.
