Kufta bozbash

// Ingredients

• Minced lamb — 600 g
• Rice — 60 g
• Chickpeas — 100 g, soaked overnight
• Potatoes — 3
• Onions — 2
• Dried cherry plums — 8
• Saffron, dried mint, turmeric
• Salt, pepper

// Method

1. 01Simmer the chickpeas in 2.5 litres of water for 1 hour.
2. 02Mix the mince with the rice, grated onion, salt and pepper and knead.
3. 03Shape into fist-sized balls, hiding a cherry plum in the centre of each.
4. 04Lower the kufta into the boiling chickpea broth and simmer for 20 minutes.
5. 05Add the potatoes in large chunks, the second onion, turmeric and saffron and simmer for 20 more minutes.
6. 06Sprinkle with mint to serve.
