Ishli Kufta Ishli kufta is an Armenian meat dumpling: a shell made of minced meat and bulgur, with a filling of fried meat, walnuts and spices inside. The dish is not fried but boiled in broth. The thin, tender shell and the juicy walnut filling create a contrast of textures. It is served hot, often with greens, vegetables, salads or lavash, and sprinkled with lemon juice just before serving.
