Adjika

// Ingredients

• Hot red chillies — 300 g
• Garlic — 2 heads
• Coriander — a bunch
• Dill — ½ bunch
• Walnuts — 50 g
• Khmeli-suneli — 1 tbsp
• Utskho-suneli — 1 tsp
• Ground coriander — 1 tsp
• Salt — 1 tbsp

// Method

1. 01Wear gloves. Remove the stalks from the chillies and keep some of the seeds — they set the heat.
2. 02Peel the garlic; rinse and dry the herbs.
3. 03Mince the chillies, garlic, herbs and walnuts twice or blend into a paste.
4. 04Stir in the spices and salt.
5. 05Spoon into clean jars and refrigerate — the flavour comes together after a day.
6. 06Serve with meat, mchadi and cheese; it keeps in the fridge for up to a month.
